Hi ho hi ho, it’s off to a hotel I go!!!!

Off I go for another week on my training course. 2 down, 3 to go.

The salvation of my nights away from home in the hotel have been my Amazon Kindle. I love this little gadget to bits! I lug it along and look forward to browsing my books to chill out after a long day studying. Honestly I can’t imagine packing a paper book now, it just seems so bulky and unwieldy!

Just downloaded for my delectation this week is The Fry Chronicles, by Stephen Fry. This man is a genius and I love listening to him, I look forward to reading this book to see if it’s as good as the reviews say :)

Home made tomato ketchup

2 lbs of tomatoes

4 cloves of garlic

2 tablespoons olive oil

1 teaspoon salt

1 teaspoon brown sugar

1/2 teaspoon vinegar

In a large oven proof pot (I use my cast iron casserole pot) place all the washed tomatoes. Drizzle over the olive oil and salt.

Place the pot in an oven that’s set at 160oc for 2 hours.

After 2 hours the tomatoes should be mushy and juicy. Pass this mix through a sieve to remove pips and skin. Return mix to stove top on a low heat and reduce by half.

Add sugar, pepper and vinegar. Stir well to dissolve seasoning.

Store in sterilised bottles.

An easy way to use up a glut of tomatoes, you can also use this recipe as a soup or as a base for pasta sauce. Just don’t reduce it if you want to do this!
