Well I think I finally cracked the recipe and have a pretty good version, even if I do say so myself!
So here’s the final version of the recipe
1 cup plain flour
1tsp baking soda
1 tsp baking powder
1/2 tsp salt
1/2 cup raisins
1/4 cup pine nuts
1 cup buttermilk or milk
1 cup bran
1/3 cup vegetable oil
1 tbsp molasses or treacle
1 large egg
1/4 brown sugar – packed
1/2 tsp vanilla
1 tsp cinnamon
Grate nutmeg.
Combine flour, baking powder, baking soda, salt and raisins in a large bowl
Stir together. Make a well in the centre stir in buttermilk. Let stand for 5 minutes.
Combine remaining ingredients starting with the bran in order listed in a separate bowl. Beat together with a spoon until well mixed.
Add this to the large bowl and mix together, just stir enough to moisten, don’t beat it, the batter should be lumpy!
Place in a 12 cup muffin pan, lined or greased.
Bake at 375f or 190c for 20 – 25 minutes. Test -when a toothpick comes out clean, they’re done.
Cool in tray for 5 mins then transfer to wire rack.
Tip – I use a potato/ice cream scoop to portion these out as it’s less mess
For final authenticity sprinkle a few porridge oats on top of each muffin before baking.
