This was the gingerbread cake recipe I posted the other day. It was so easy to make and smelled yummy as it cooked. The cake mix is more like a batter when you make it than a regular cake mix and I was a bit concerned in case it didn’t work, but wow! I’m going to hide it for a few days to make it go sticky (well I’ll try, but knowing this house it will be found and scoffed!)

Competition Bento

This is my competition entry for “breakfast 4 lunch” bento on obentolunchforkidz
My bento is an “english breakfast” it has a fried egg sandwich, made from cheese, bacon, made from salami, beans, toast, cherry tomatoes and sausages. On the bottom tier we have fruit and fibre with banana and a cup of milk for the cereal on the side.
Recipe for the day
Gingerbread Cake
2oz golden syrup
2oz treacle or molasses
4oz butter
6oz plain (all purpose) flour
1 tablespoon ground ginger
1 1/2 teaspoon ground cinnamon
4oz soft brown sugar
1 beaten egg
1 teaspoon baking soda
1/4 pint milk
Method
Melt butter, syrup and treacle together in a saucepan
Fold in flour spices and sugar
Stir in beaten egg
Heat milk and pour over baking soda
Stir milk mix into cake mix
Pour batter into a greased or lined loaf tin.
Bake at 150oc for 1 hour
After a day or so the cake starts to go sticky on top, mmmmmmm!!
Serve as you like (probably with custard in this house!!)
Tuesday Lunches!

Tuesdays lunches have a bit of a theme going on! I went a bit overboard when measuring my rice for tea tonight and as a result we’re all having vegetable rice and meatballs for lunch tomorrow!
My bento (green) has veggie rice, meatballs, red grape and cherry jelly (jello) heart shaped egg, cheese triangle and a pot of sweet chilli sauce. Small sprog (yellow) same as mine but with less of a portion and a small pot of yogurt raisins instead of a cheese triangle. Oh and carrot shapes too!
Daughter number 2 just opted for rice meatballs and sweet chilli sauce as did hubs! ( Have you spotted another theme yet?) We all happen to be rather partial to sweet chilli sauce and will use that as any other household would use ketchup or brown sauce!

It’s a spork, rather handy gadget for lunch boxes as it’s a knife fork and spoon all rolled into one.
Bento for Monday

Bottom tier: Cheese topped roll with smoked ham and cream cheese
Top Tier: Pink onigri, mini choc chip muffin, cereal bar, piece of sausage roll, sugar snaps and baby corn.
Bottom tier: Red grape jelly, pretzels, fruit flakes, mini choc chip muffin
Top tier: Piece of sausage roll, ham skewers, sugar snaps and baby corn, pink onigri
I’m having fun with all the bento lunches I’m making. Currently I have enlisted in a swap group and a very kind lady in USA is going to send me some goodies! In return I’m sending some chocolate and biscuits from the UK. Will post pics when I receive the items.

This was my Christmas pudding (1st ever!!!) Goodness knows how it will taste by December but it looks and smells ok so far!

Batch cooking
Today I’m getting a head start on things for the rest of the week. I’m batch cooking so that I don’t have to run round like a loon when I come home. Currently I have baked a batch of mini choc chip muffins to put in bento this week, I also have lasagne on the go and I’m getting a head start on Christmas too!
The Christmas pud is simmering away nicely in a pan on the hob. Now I have never made Christmas pudding before so this will be an interesting experiment!
Arggghhhhhh!!! Just discovered that hubs has found the mini muffins, ah well I guess there won’t be as many for bento next week!!
