Curry Night

Tonight is going to be a cook from scratch curry night. I’m even having a go at making my own peshwari naan bread from scratch.

The curry I’m trying tonight is a shahi murg. I found the recipe in a book called “The complete book of Indian cooking”

The kitchen smells wonderful presently with aromas of cooking meat and all the spices that are used in the dishes.

So here’s the recipes if you’d like to try them………

Shahi Murg

1 tea spoon cumin seed
1 teaspoon coriander seeds
2 teaspoon veg oil or ghee if you have it
1 onion sliced thinly
8 chicken pieces (I’m using lamb instead, approx 1 – 1.5 lbs)
1/2 teaspoon salt
1 1/2 cups natural yoghurt
1/2 cup double cream
1 tablespoon ground almonds
1/2 teaspoon garam masala
3 cloves
seeds from 3 cardamom pods
1 bay leaf
1/2 cup sultanas

Method

Grind spices
heat oil in a pan and cook onion until soft
brown meat well and add to onions
Add cumin, coriander, salt, yoghurt, cream,. almonds and garam masala
Bring to a gentle simmer and add cardamom, bay leaf and sultanas
Simmer for 40 minutes until meat is done and sauce is reduced and thickened

Serve with rice and naan bread

Vodka Skittles



I thought I’d add a fun little shot for you to try. I discovered this quite a while ago and although it is very yummy, it’s also quite potent!

Vodka Skittles

1 70cl bottle of vodka (doesn’t need to be a premium brand but 40% proof works best)
1 family sized bag of skittles (or more if you want to make single colours of vodka)

To make a murky coloured vodka (tastes fine BTW!!) remove approx 30 – 50 ml of vodka from the bottle.
Pour in family bag of skittles
Reseal bottle and shake every day
Leave until skittles have dissolved completely, usually takes a week or so
Strain through a coffee filter or muslin to remove the leftover sugar coating residue
Reseal the bottle and chill for at least 24 hours before serving in small shot glasses.

To make single colours of vodka, depending on your favourite flavour, as above but use approx 30 – 40 skittles of your chosen colour.

You can also speed up the process by placing the bottle of vodka ion the dishwasher!! This helps the skittles to dissolve faster.

Finally I’m back online. The pc managed not to die completely but it did have to go to hospital for a while!

Maybe now I can get on with clearing out my house thanks to freecycle!!

New Recipe for you all to try

Juicy Burgers

1lb of good quality lean minced beef
1/2 of a medium onion finely chopped
4 slices pan loaf, whizzed into breadcrumbs

any herbs you fancy

mix all of the above together very well in a bowl. add seasoning to taste and chill for no less than 1 hour.

divide into 4 portions and shape into round balls, then flatten slightly to make the burger shape.

drizzle slightly with some olive oil before cooking.

Cook until done as you like, mine took less than 10 minutes on a medium heat on the health grill.

I cooked mine on a health grill which kept them lovely and juicy but you can cook them in a dry pan, over a medium heat or on the grill. The mix has to be chilled to help the burgers keep shape while cooking.
